Chocolate Cream Cups

The Chocolate Cream Cups dessert is an absolute favorite of mine. When I think of fresh fruits and summer this is what comes into my mind. If you’re not a wiz in the kitchen then follow this recipe, as with no skills at all you will be able to whip this up in no time.

Hey if I can personally do this at home and I’m a total klutz in the kitchen, (just ask my wife) then anyone can follow the recipe & serve up this tasty treat to their dinner guests.

Ingredients: (dessert serves 4 people)

180g yummy white chocolate, chopped up into broken pieces
250g mascarpone cheese, warmed to room temperature
1 teaspoon vanilla essence
425g of fresh blueberries, blotted with paper towel to remove juice
4 chocolate dessert cups
White chocolate curls, to serve (instructions at bottom of page)


Preparation Method:

1. Put the white chocolate into a china microwave safe bowl. Microwave uncovered, on medium heat for 2 to 3 minutes. Stop every minute so that with a metal spoon, you can give it a stir.

2. Continue until almost melted, then take out of the microwave and stir until smooth. Allow to cool for 5 minutes.

3. Fold mascarpone and vanilla essence through chocolate. Next you need to spoon the mixture into the dessert cups. Top with blueberries and chocolate curls. Serve.

How to make the white chocolate curls:

Spread the melted but cool white chocolate into a thin layer over a flat baking tray, or a marble plate. Allow to set at room temperature, or until the white chocolate is no longer sticky.

Using a large-bladed knife, run blade over chocolate towards you to create curls.

Place the chocolate curls onto a tray of greaseproof paper and place in the fridge until you are ready to use them to garnish your dessert.
